Alligator jerky is made from the tenderloin, inside of the tail. It is the choicest cut of meat, very much like veal in texture. Alligator meat tastes mild, somewhere between chicken and rabbit, with a hint of fish, similar to frog legs.
- Flavor – a hickory smoked jerky seasoned with salt and black pepper. A mild white meat with the flavor of chicken and a bit of fishiness.
- Meat cut – Medium-thick strips of tenderloin tail whole muscle meat.
- Chewing texture – A medium chew jerky
