Alligator tenderloin comes from the inside of the tail, it is the choicest cut very much like veal in texture. Alligator meat tastes mild, somewhere between chicken and rabbit, with a hint of fish, similar to frog legs.
Flavor – a hickory smoked jerky seasoned with salt and black pepper. A mild white meat with the flavor of chicken and a bit of fishiness.
Meat cut – Medium-thick strips of tenderloin tail whole muscle meat.
Chewing texture – A medium chew jerky
